Returning to iOS after a decade; what's new?

Pulled the trigger on the new SE model, what do I need to know after being in the Android mines for so long?

For example, any must-have apps that supercede what comes standard on the phone?

Edit: well, this blew up. Much obliged for all the info/recommendations.

I have a 18w charger and case on the way. Having some trouble finding an agreed upon quality screen protector, though.

I'm going through over 9000 photos, most of them are memes and photos of my dog. There's some in there of random stuff such as when I took photos of a shelf of gin to ask my partner which one she likes. Stuff like that I'd love an option to keep for 30 days then it's put in the deleted folder.
